India is one of the top coffee-producing countries, known for its shade-grown coffee cultivated in the biodiversity-rich Western and Eastern Ghats. The country primarily grows Arabica and Robusta, with Robusta accounting for a larger share. Indian coffee is highly regarded for its full-bodied flavor and distinct earthy notes due to its unique processing techniques. Indian coffee is mainly cultivated in Karnataka (Over 70% of India’s production), Kerala, Tamil Nadu, Andhra Pradesh, Odisha, and the Northeastern states (smaller production regions).

The two main commercially cultivated species are:

  • Arabica (Coffea arabica) – Known for its mild, aromatic, and slightly acidic profile, grown at higher altitudes.
  • Robusta (Coffea canephora) – Strong, bold, and high in caffeine, grown at lower altitudes, often used in espresso and instant coffee.

Indian coffee is classified based on its processing method:

  • Washed (Wet-Processed) Coffee – Clean, bright acidity with refined flavors. It is processed as the coffee beans are fermented, washed, and sun-dried, resulting in a bright and clean cup.
  • Unwashed (Natural/Dry-Processed) Coffee – Full-bodied, deep, fruity, and intense flavors. It is processed as the whole coffee cherries are sun-dried before extracting the beans, creating a richer, fruitier taste.
